Also, how do you define man or woman? It's estimated between 1 in 1500 and 1 in 2000 babies are born intersex, so the doctors and or parents have a decision to make on what gender the child will be, and will need surgery / hormones to kick start the desired puberty. Get it out of your head that everybody is either XX or XY, that isn't the case, never has been the case. Some are XXY, and some are neither. Not everything is black and white.

You missed the point by a mile. If 1 in 1500 we're born intersex that means their gender was assigned and surgery and/or hormones were needed to complete development of the chosen gender. So if someone is born neither XX or XY, has it decided that that'll be male, then that person decides later in life that they are in the wrong gender? Does that still count?

You're still stuck on male and female being 2 completely separate easily definable entities. They're not.
