Q2: His friend/relative or even himself wanted to die on Irish (or another country/county etc. etc. etc.) soil. So As he couldn't be where he wanted to die, he brought the soil from that place instead.

Q3: Because he's a pilot and as the aviation industry uses Zulu time for all flights he didn't want to change his watch until his flight was over. Technically daylight savings doesn't kick in until about 2am, I think.
