I'd say I would most likely do a lot more reading, particularly the classics. I'd probably do a lot more travelling as well, and maybe even do some writing of my own.

Travelling and meeting new people, maybe even travelling with a companion.
Just like Larry Hagman, I'd get pissed up constantly and buy up all the livers in the world so I can live forever.
