Secondly you are two consenting adults. I agree with not admitting having paid for anything. If the girl is truly independent you are safe, if there is more than one girl working and the premises is legally entitled a brothel, you can try the shocked just met in the pub story, however ignorance is no defence in the eyes of the law. While not being charged you will be the witness albeit a hostile one.
In a strange way a non native speaking escort may be an advantage because if you understand or have some words of the girls native language you can tell her not to say anything or say something like my girlfriend in her own language. I have a few sentences of a lot of languages.
Thinking about it now, I would grab the girl get under the covers and be in the middle of mad lovemaking as the door opened, would put the gardai on the back foot a little and would add credibility to the girlfriend story.
I suspect the legal pressure is more likely to come from a member of the Gardai watching the premises and stopping the client on exit, a little bit of moral pressure about telling wife/girlfriend/boss. In that case I would suggest a complete arrogance towards the officer, you what, I did what and you are going to do what, by all means go ahead and be prepared for my solicitor to slap a legal writ on you as fast as you can start the mondeo you have been sitting in for the past hour.
These are just my thoughts and not, I repeat based upon any great knowledge of the law, but on many years experience of being questioned by gardai for no real reason!!!!!
