I totally agree that this can be very frustrating and annoying for a client. I suspect that there are some girls that do it purely to attract business. Others genuinely offer the services advertised but may not be willing to do it for a specific client for reasons such as hygeine, lack of trust etc..
I have stopped looking at the services listed when I view a girls profile. I choose an escort primarily on her reviews, her photos (sorry but I'm a shallow male) and where present - her posts. I treat the first visit as a sort of mutual interview. I get to find out first hand what services she will provide for me (not just any random punter). I have always found the girls I've visited to be more than accomodating. Obviously each girl has her set of boundries and I would never dream of trying to coax her to breech them. I think being very respectful and very clean have a significant impact on what services will actually be provided.
I like to develop a sort of working relationship and have my 'regulars'. It is so much easier because you both know what to expect, so there's no dissapointment or tension.
