I have some comments:

Overall, this is a great document, I am impressed.

A useful addition would be a "cut out and keep" document written in English that an escort could print off and show to a Garda. This would have a series of statements along the lines of:

"I do not consent to your entering my home, place or work or any other premises unless you are in possession of a warrant." In the UK, such cards are being used, for example, by photographers who may be harassed by police officers for taking photos in public places. It serves two purposes, it allows an Escort to claim her or his rights regardless of their state or mind or proficiency in English and it also puts a Garda on notice that these rights have been claimed.

Secondly, I would add some advice that is often give by outfits such as car clubs.

The Garda may have received training or other coaching in a line of questioning that seems to be perfectly innocuous but which will lead to a situation in which you inadvertently admit to breaking the law. In a motoring sense:

"Lovely car. Quite rare. Must be hard to get somebody to look after it. Do you look after it yourself?"

"Yes. I just replaced the brake pads this morning."

"Nice one, everything OK with them?"

"Yes, they are working just fine."

Now try to argue that you have not just admitted performance testing a vehicle on the public highway. Compare that with the Ts and Cs of your car insurance and you have just admitted to driving without insurance. (One UK car club gave out that example saying that it came from a police officer who was also a club member.)

The general principle must apply to escorting as well and it would be better for an escort to be aware of this.

Finally, considering the English version of the document. I'd give it top marks except for one thing - if it is read by a person who speaks English as a second language, it will be unclear.

Consider this example:

Now consider a situation in which two escorts (A and B) are trying to understand how this applies to them. There is no translation of this document into their own language. A speaks little English, B speaks good English and B answers A's phone. B wants to raise money to open a small business in her own country, the two work together in Ireland on a series of short tours and at the end of each tour A gives B some of her earnings and B adds that to her pot of savings. They read the document and B understands that to "live off" of somebody means to depend on them financially. B does not depend on her friend A, she covers her living costs herself and just adds the money from A to her own pot. B does not think that she is "living off" her friend A and does not understand the way that "live off" will be interpreted in law.

Another example would be:

To a native English speaker, the meaning of facilities in this context is utterly clear. Not so to a non-native speaker.

To pick an example from outside this document:

Last week, I was in a shop in Dublin. I was up on the second floor and wanted to leave so I found the lift. Two rather nice looking Polish ladies were also waiting and when the lift arrived we all entered. (I waved them in ahead of me saying "S'il vous plait" which always goes down well.)

They then looked at the signs in the lift. A printed card stuck to the wall indicated what was available on the Lower Ground floor. They knew what they were looking for and the sign told them that it was on the Lower Ground floor. The shop had upgraded themselves from having a Basement to having a Lower Ground Floor. Sadly, they hadn't bothered to upgrade the control panel on the lift so that still read 3 - 2 - 1 - G - B.

While this was going on, I pressed G for myself and the ladies shrugged and decided to get out at G and then go look for the Lower Ground.

I pressed B and spoke to them. "Look, 'B' for 'Lower Ground' it's obvious."

Their English was so good that they understood the joke, laughed, smiled and said thank you. This illustrates that, however good is your English, if it is not your mother tongue, there will be many areas that are a mystery to you even though they are obvious to native speaker.
