You better believe that governments and corporate entities worldwide are buying up loads of crypto over the last few years - the reason being that, when the Central Bank Digital Currencies come in, they will need a discreet means of engaging in the shady shit they always have done. They'll make it difficult for you to use them in your normal life, but they will deal almost exclusively in them. There are already coins, like Monero, that are still completely anonymous.

I would definitely invest something in Bitcoin, and personally a couple of privacy coins too. If you are just gonna buy and hold, then Coinbase will do fine, but if you plan to do any trading then be aware that Coinbase's trading fees are nasty.

Simply buying bitcoin, I did make a few euro trading on revolut when it spiked during covid. But comission was at 3.5%. you think that isn't so bad, but to buy and sell that's approx 7%. So unless you're seeing a really good spike, revolut are making more than you. Your money is probably safe with revolut though, and they are a good option if you're just buying low and holding.
Binance haven't been mentioned, as far as I know, they have the lowest commissions. They say they are the biggest crypto exchange. Lots of people don't trust them though.

I didn't mention Binance because I don't think Stephanie is interested in regular trading, I think Coinbase is much more user friendly for a novice. I use Binance, but there have been some issues over regulation either with Ireland or the EU.
