I don't have any recommendations for an escort that will do early meets but I think you'd be best to try someone you already know.
Also I think they might need a deposit, in case they get up early, get themselves prepared and then you don't show up.

Ellie doesn't seem to mind early morning appointments.
She's not advertising at the moment but she's back soon I believe.
You will also see one or two who have "available now" on their profiles at 6am and 7am.
They're working from the night before. I see them quite often when I do an early morning search.
