Once you've paid for a double room it's none of their business, the only issue could be if she is arriving alone to meet you late at night, but even then unless you have booked a double room for single occupancy it's not their business. Generally that's only an option when breakfast is included in the room rate.

Some hotels require all guests to be registered

Normally its no problem to meet in the public bar and then retire to the room - It may be a problem when the public bar is closed

There are few boutique hotels in Dublin where guests are a problem if not registered at check-in by the main guest/payer.
