    The key word here is 'industry', not 'food' or 'health', and it's the commonality between the two.

    In any industry, the main thing is to make money. It's the reason all companies continue to exist, if not their reason to start in the first place. If corners have to be cut to increase profits, then they will be cut, or the company may close down.

    Best and most readable book on the food industry is still Eric Schlosser's Fast Food Nation (it's not just about McDonald's, etc). Should be compulsory reading for anyone who buys food an cares about how it reaches our tables.

    If there's a book someone should read is Pure, White and deadly, by John Yudkin it was written in the 70's and everyhting he's said back then has come to pass, I'm absolutely in awe of this man, sadly he's passed away, it describes how not fat and cholesterol, is at the root of the heart disease, obesity, and type II diabetes epidemic we are currently facing. it's astounding.
