I would say most escorts would use the same discretion expected from clients.
If you were on your own, they might say hello, but if you're with friends, then they will stay well clear.

I would quickly look/walk in another direction and forget I ever saw her. For reasons already stated, mutual privacy and all that.

I was once following my better half around a shoe shop with my hands in my pockets when I became conscious of a girl close by on the phone who was clearly negotiating a meeting with some punter. I didn't recognise her at all but my first instinct was to get out of the shop. Dunno why really but that was my reaction.
