If I could only choose one though, it would be Firefly. Easily the best sci-fi ever, simply because it had proper characters, and a sense of fun. Brilliant show.
Then, Arrested Development. Such an underrated show. Gob and Tobias are among the greatest tv characters of all time. Subtle comedy in places - I'd find myself laughing at the tiniest detail, or hidden joke.
Finally, Spaced. It had at least another two series as good as the first two in it, since Pegg, Frost and Wright are such geniuses.

Since we're talking about cancelled Scott Bakula shows, Star Trek: Enterprise was also a show that was cancelled before it's time, only having 4 seasons.
A Scare at Bedtime with Podge and Rodge - the lads were in their element here before they went all mainstream, lost their mojo and were reduced to silly interviews with nobodies.
The X Files was brilliant sci-fi in its heyday, especially the long-running Alien plot, but ran out of steam when Gillian Anderson and David Duchovny left. Who can forget the Smoking Man and the Well-Manicured Man?
