I would say nothing, I wouldn't have any conversation with them. I would be on my way. I have no intention of playing assgrab with the gardai. They are out of control and use threats to get their way, but I would be hopeful for some respect, decency, and the ability to go around my law-abiding life without being harassed.
Some gardai are after whoever they can find. The more alleged crime-busting they do, the more it seems like they're working. Some gardai, not all gardai, just find naive people who they think won't fight back to pick on and keep doing it, as has been seen in the recent relevations of police harassment of working class people.
They go out patrolling the street. I hate them, I hate the way they have their uniforms on and people are supposed to be afraid of them. If I had a chance to physically assault a police officer after he tried to damage my freedom or the freedom of others I'd do it.

When they come in....what do you say? What do you do?
Also, if they stop you after your meeting, on the way back to your car, maybe, what then? Do you tell them a load of S**t or admit you "paid" for sexual services????

It can arouse their penises for all I care. They would have to go to their superintendent or whoever asking for a search warrant and they don't like doing that for trivial things.
