I accidentally double clicked on a profile and it gave it a tick

Then noticed I can click/unclick beside the favourites icon

What’s the story with it? What’s it do?

Adds it to your shortlist.

Click on shortlist at the top to view the people you double clicked on.

I think the shortlist is temporary, it clears when you log out.

Shortlist is just that, a list of adverts you wish to save for future reference, for whatever reason.
Favourites list should be a list of adverts you consider to be your "favourite" and potentially to receive notifications regarding these adverts, depending on the settings you have chosen

However, do with these lists as you please, the above is just a guide.

Glad I asked cause I’d no idea that was a thing!

Good to keep a temporary log when your switching over and back between profiles I suppose. Good to know
