Not everybody born in China will look Chinese, nor does everybody born in UK or Ireland look British or Irish.
So I see no problem with them saying something that they are not.

Fraid you don't seem to have a very vivid imagination.
Just about all will want to keep their escorting life private from the folks back home,for one. Stating a different nationality blurs their identity a little.
Many East Europeans live here and might decide to visit an escort of their own nationality, an escort doesn't want to meet some guy she was at school with 10years ago. Many do not meet their compatriots.
Others will have different reasons to blur nationality that I won't speculate on.
A self professed cop should imagine the shadier elements that could be associated with the world of escorts especially in countries wbere it is only semilegal or even illegal.
