Sometimes it just automatically comes out if i'm asked do i want a drink i just say water. I had a lady jokingly say once how come you irish guys always go for the water ye must be very healthy and she had a choice of drinks. But mostly now i bring a bottle of wine with me.

apart from wine,i have come away from so many appointments over the years where if the girl spent 500euro on a few extra towels,had a good sound system in the room it would create a nice athmosphere and a place you would want to return too.
I finish work at 8pm, so for me drinking before then is a bit early. I once had a client bring a bottle with him at 11am. I offered him a drink and he said he would like to crack open the wine. I declined drinking any and I asked him if he was driving, to which he said yes. So I passed the glass and the bottle to him and said for him to take what he wanted, as I did not want to be responsible if he should have an accident. He had 3 glasses.
If I know a client well and I happen to have some wine with me or they bring it, then I may share one at the end of the day, but generally I prefer to have my faculties about me and be in full control and prefer my clients to be the same. Alcohol is fine when you're not working, but how many professions these days allow drinking on the job? There is a reason for that.
Dinner dates, different, as you are eating and drinking at the same time. The other thing about this job, is that most of us tend not to eat too much while we're working as it can make you sluggish and drinking on an empty stomach is not a good idea and most people do want us to share the drink with them, so they are not drinking alone.
I think more a matter of working within your comfort zone rather than short sighted.
