The reason, I suspect, is the same reason a lot of other businesses do not display their prices. It prevents people simply picking the lowest price.

If an Escort is touring she may decide to rise or lower her rates depending on how busy or quiet the town/city she is visiting is.

Same as the reviews now really as rates are in most cases are not displayed.
