Surely all punters are 45+, wearing brown 3 piece suits, sporting stripped ties, with badly fitting hairpieces, a Times newspaper folded under one arm and using their mobile phone while trying to look like they are just out for a quick stroll during an office break.

Or maybe.....................just maybe................they are all different.

Ranging in age from 20 ish to 70+ .
Wearing clothes indistinguishable from regular people.
Bet some are in good shape and more are as fat as you can get.
Some maybe from Dublin and more from the country.........................visiting the big city for the culture.
You might also possibly find a foreign person punting.

No......there is no way to know for sure when you see someone using their mobile that they are punting unless................
unless.................they are wearing that secret badge (you do have one?) and are using the special handshake......

I agree with Magicman. Turning the question on its head, do you recognise escorts walking down the street? Do they have a sign on their forehead or a badge on their coat? Of course not, you wouldn't have a clue who's an escort and who isn't. The woman standing next to you in the queue in Tesco could be an escort but, unless you had visited her, you or anyone else would never know.
