Since escorts have access to their profiles they can make the most of changes themselves(photos,details)...I don't see big problem in her profile if photos are genuine she can change nationalities...maybe this is her way to attract new clients

Its not the biggest thing in the world but what if you are looking for an Escort that is Indian and you are Indian and want a taste of home and she turns out to be Spanish or Native South American?

In order to be sure of what exactly nationality of particular escort is we would need to ask for ID.That would help to verify nationality and age but many escorts would not like to do that at all. E-I relies on the information given by escorts.

That's completely understand if they don't want and you can only work with what you are given but they could at least stick to the one nationality or look at a map and pick a new one within say a 1000 miles of the first.
