The Criminal Law (Sexual Offences) Act 2017 prosecutes a person who “pays, gives, offers or promises to pay or give a person (including a prostitute) money” or any other kind of remuneration to engage in sexual activity.

The problem is that the police check escorts adverts on different site and use this to find where they are advertising, sometime pretending to be a punter themselves so they know where the escorts are advertising.
Once they have found a potential escort and location, then they stay outside the place, possibly have 1 person inside the building to watch people going in and out of the room.
After they have a set number of how many go in and out of the apartment during a day, they then decide that it is an escort and that is when they make their move.

But the issue is that they cannot really prove that sex took place in exchange for money, they can only speculate that sex had taken place.

When the that person leaves the building, then the police will usually grab that person to one side and then will question them, asking that person if they know the lady and ask if they know the escorts real name (police will somehow have notes of the escorts information), but as many don't know the escorts real name, they give the escorts name out.
So for the police, this to them is their prove that sex in exchange for money had taken place.

I myself would not tell them anything, or say that I had a massage only.
They cannot really force you to them what they want to hear.
