Perhaps the biggest effect the Normans had was their profound effect on the English language-1066 and all that.
In Sicily the Normans replaced a Muslim ruling elite that had been in situ for perhaps 150 years .Arabic eventually died out in Sicily but I presume it has left some traces in the Sicilian dialect.
Arabic continued to be spoken in Malta and today's Maltese language is a combination of Arabic and Latin/Romance derived influences.
In Ireland the Normans became ,so it is said,Hibernis ipsis Hiberniores(more Irish than the Irish themselves)due to their rapid intermarriage with the natives.
