so could i use my phone then as a broadband dongle by using the wi-fi which in turn would i be able to use my laptop then

I use an EzCast dongle in the back of my Tv.
I think the Google Chrome stick does the same.

My phone screen appears on the TV.

Ok you might look at bit odd going out carrying a TV, but maybe at home this would help.

It will also mirror your phone screen to a laptop, or tablet.

sorry not well up on phones and internet but got my phone and provider gives 30gb of data and unlimited free calls on PAYG a month, i cant see the internet properly on the 5.5 inch screen so need much bigger screen so would like to use the sim in a large tablet or other device

Just stick the sim into an ipad or something similar.

yes turn on the portable hotspot function on your phone and then connect laptop/ipad to it as if it were a wi-fi network. OR get the guy in the phone shop to do it for you...
