Ladies like Sophie et al. aren't usually available at short notice. Maybe PM / text / call many times ( carefull though, don't want to over do it) and arrange an appointment.
Once you have met the lady once, and she liked you, then it's usually much easier to get a subsequent meeting.

My advice would be to leave it for now, Sophie will probably see this thread and might PM you with a bit of luck. She's probably out and about enjoying herself as ladies do.
