Sweet pepper gazpacho

A delicious twist on a classic recipe that is tasty and clourful.
Ingredients
2 red peppers, halved and de-seeded
700g/1½lb ripe tomatoes, peeled and chopped
½ cucumber, peeled and chopped
2 cloves garlic, peeled and crushed
110g/4oz fresh breadcrumbs
4 tbsp olive oil
1 tbsp white wine vinegar
570ml/1 pint tomato juice
1 tbsp basil leaves
salt and freshly ground black pepper



Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Brush the red peppers in oil and roast in the oven for about 30 minutes until soft.
3. Place the roasted peppers, tomatoes, cucumber, garlic, bread crumbs, olive oil and vinegar in a food processor and blend until smooth.
4. Add the tomato juice and basil and process briefly.
5. Season to taste and chill well before serving.
