Depends on your sector, more than what your degree is actually for.
I was actually earning 35k in the uk outside London plus extras, and I changed career at 40 and started at the bottom. Its all about in demand skills and a quick google will show you what they are. My degree has nothing to do with my current career, it just showed prospective employers I could study and learn, but I work with guys in the same job earning the same and no degree. Some have little English, come from Poland, lativa all places. Its about your hunger and desire and effort. I studied a lot to get where I am and had to take many exams and tests.
Ireland actually pays better than the UK, although the bank tax has eaten into it
