Wouldn't call it a killer recipe, but I just add finely chopped onion, egg and breadcrumbs, and I am generally pretty happy with the result.
You can add some chilli powder to the mix if you want to make it more interesting.
This recipe is Jamie Oliver. I know some people find him annoying but the man can cook. These burgers are scrumptious.
Recipe for Beef Burgers - Serves 4-6
1kg Steak mince
1/2 Red onion diced finely
1 tsp Dijon Mustard
2tbsp Grated Parmesan
Handful Breadcrumbs
Egg (medium size)
Splash of Worcestershire sauce
Pinch of ground nutmeg
Method
*Finely dice onion put in all in a mixing bowl and get your hands in there to mix it properly.
*Make 4 patties and put them in the fridge for an hour or longer so that they become firm (less likely to break up when you're cooking them)
*Heat frying pan to between medium and high
*Rub a tiny bit of oil onto each pattie then season with salt and pepper
*Cook for desired time (guide below) turning every minute carefully so they don't fall apart
*Cooking time depends on how thick they are but as a guide: 10mins =medium, 12mins =medium - well, 14mins for well done.
Tips:
If you want it to have a bit of a kick, finely chop a red chilli. I'd recommend splitting your mixture in half and doing half with, half without just in case its too harsh.
Wholegrain Mustard works nicely instead of Dijon
