A vehicle moving on Grafton Street at 09:15 on a Sunday morning isn't going to look as suspicious as one there at say 04:00. Goods vehicles have access to Grafton Street between 05:00 and 11:00 so on a Sunday morning seeing a vehicle there would not look very suspicious. This could give them the element of surprise. As for people being around, they are not likely to get involved in something like this to try and stop it. There would be more of a chance at 04:00 of someone who is drunk getting involved.

A lot of robberies take place in broad daylight as no one pays any attention to what is going on, it's a bit like hiding in plain sight.
